Burger Buns




Tea spoon= t sp
Table spoon=tbl sp

Ingredients:
All purpose flour/Maida:3 cups (450 gms) + 1&½ tbl sp
Yeast: 2 & ½ t sp
Sugar:2 & ½ tbl sp
Milk powder:3 tbl sp
Salt: ¾ th  t sp
Butter: 1 tbl sp
Milk : ½ cup 150 ml approx
Sesame seeds: 1 tbl sp
Water as required to kneed soft dough like chapati.

Procedure:
  • Proof yeast:first if all proof the Yeast by following below steps
    1.  In a bowl take yeast and add sugar on top of it. Now add Luke warm milk onto it, mix yeast sugar mixture with spoon, cover it and let keep it aside for 15 minutes.
    2. After 15 minutes, the froth should appear on top of yeast mixture. If not then throw the mixure and buy new yeast. If froth has appeared then your yeast mixture is proofed. It's ready to use.
  • Maida paste:only in burger buns, this paste is required for fluppy and super soft outcome. To make it, in a non stick pan, take 1 & 1/2 tbl sp maida and 6 tbl sp water. Now switch on gas, keep stirring and cook this paste till it is slight thicker. Then switch off the flame abd let it cool.
  • Take a big part or plate and take maida on it. 
  • Add salt, milk powder and mix it 
  • Now add maida paste and yeast mixture and mix them all together.
  • Now add Luke warm water little by little and keep kneading the dough.
  • Once dough consistency is little more softer than that of roti/chapati, take butter apply onto the doaf and start kneading it with stretch and pull method. Continue kneading for around 10-15 minutes. 
  • Apply little oil in your palm to kneed the dough it required. Apply oil in big bowl and transfer dough into it. Cover the vessel with thin cling or another dip big vessel. Keep it in a warm place for around 1 & ½ hours.
  • After 1&½ hours the dough will be more than double in size.
  • Now take the dough out onto platform , punch it to remove air and add some flour to kneed it again.
  • Now make little round bolls which are more in height less in width and arrange them onto cooking tray which are greased with oil.keep them in a warm spot for another 45 minutes.again they will be double in size.
  • Now just before baking, use cooking brush to apply milk on top of all buns to get nice brown color. Sprinkle some sesame seeds on top of them.
  • Pre-heat your oven in 190 degree and bake the buns for around 20-25 minutes. 
  • Once baked, remove them from oven, apply butter in top of them and cover the tray with damp cloth so they don't become dry. Let it cool. Buns are ready.
